The fish sauce or “nuoc mam” is a sauce made from salt and fish. It is also a key ingredient in Vietnamese cuisine, a dipping sauce which complements most Vietnamese meals to add a saltiness flavor. According to the fishermen, not all fish are used as fish sauce, just only using special anchovy fish such as “Com Do”, “Com Than”. Especially “Soc Tieu” Anchovies could make the particular Phu Quoc fish sauce flavor. Phu Quoc’s fish sauce is made by combining anchovies, salt, and water and sometimes the pepper grown on the island and fermented through various stages for six months up to a year.
The fishermen said that the fish sauce is usually brewed in decades-old barrels of a particular type of wood, the characteristic wood of Phu Quoc primitive forest, contributing to the smell of fish sauce and the color of cockroaches’ wings.
Fish sauce factories are distributed in Duong Dong town and An Thoi town along river
When visiting factory, you is told a story about fish sauce production process and have a look at a storage containing large vats from which the sauce flow into smaller one and then plastic containers to bottling process. Some factories also have a small shop selling different grades of fish sauce.
